Vinification

The fruit is handpicked when the sugar exceeds 24 degrees and crushed to release the sweet, concentrated juice. Pre-fermentation cold soaking swells the shrivelled berries and extracts flavour from the skins.

All Saints is far from the darkest rare tokays, but don’t be fooled: this is an average of a whopping thirty-five years of age. Its aromas declare its maturity in allusions of a dusty old tractor shed, walnuts and raisins, balanced with youthful notes of cumquat and fig. There’s intensity and focus to the palate, with taut acidity driving long and linear, laced with bitter dark chocolate, and lingering with excellent line and length. Drink: 2013.
