Vinification

The fruit is handpicked when the sugar exceeds 24 degrees and crushed to release the sweet, concentrated juice. Pre-fermentation cold soaking swells the shrivelled berries and extracts flavour from the skins.

The savvy Brown clan, three young siblings who own All Saints, are determined to hook a younger generation on to its fortifieds, hence the sharp labelling and slim-line bottles sealed in Vino-Lok - the snazzy glass stopper. Of course, whats in the bottle counts most of all and winemaker Dan Crane crafts exceptional wine. This Tokay, (classified as Rutherglen, so about five years old) is a wonderful mix of burnt toffee, molasses and cold tea. Its a silky smooth and, while rich, its not at all cloying. Lovely stuff.

The name embodied in the label indicates it's the freshest, lightest and most youthful of the regional fortifieds, here badged as "tokay" while others have begun to call it "topaque". It is made from the muscadelle grape and offers a seductive toffee scent with flavours of dried apricot, malts and glazed almonds. It's delish after dinner with wintry tarts and puddings. Rated 3½ stars.

Winemaker Notes
Tokays from their national birthplace in North East Victoria are revered by connoisseurs and pleasure- seekers alike. They are classified by blend age to mark the dazzling progression in richness and intensity as older stocks are blended in from barrels. Rutherglen Tokay is a fresh young blend with lush fruit flavours.
