VinificationAll three parcels were hand picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty four hours later. Wild fermentation was completed in barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity.

I like this chardonnay a lot. Smoky
savoury notes on the nose, with
deeper cereal and grapefruit
augmented by some nice light, toasty
oak. The palate shows some beautiful
butterscotch and mealy grapefruit
characters. It’s perfectly balanced and
almost delicate in the mouth. Yet the
intensity is profound.

Gin Gin, Davis and Dijon clones from the home vineyard in Wilyabrup, whole bunch-pressed, settled overnight, cloudy juice wild-fermented in French oak, matured on lees for 9 months with minimal stirring. Vibrant, zesty and fresh, with white peach and grapefruit dividing the spoils of the overall flavour set. It is terrifyingly good at its price and origin.
