This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality.

Vinification

All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity.

The Real Review, 22 May, 2019
High-toned spicy grapefruit aromas followed by intensely ripe stone fruit flavours in the white peach and honeydew melon sphere. Incredibly fruity and bright and a little warmth and spice on the close.

A rich array of ripe-peach aromas with some tropical melon, too. The palate has a very fleshy feel with praline and butterscotch-coated peaches. Drink now.
