Coonawarra is a uniquely Australian place with some of the world's best cabernet. Attractive, elegant flavours on the palate, intense, in a typical Coonawarra style. A wonderfully rewarding wine which is paired nicely with Moroccan style Tajine stewed shoulder of lamb.
Alluringly varietal yet distinctive bouquet of sweetly ripe boysenberry, cassis, briar and dried cranberry with a tempting cedary note.

Matured for 24 months in a mix of new European and French oak.
An attractive, elegant, medium bodied palate displaying sumptuous mulberry, blackcurrant pastille, pomegranate and red currant fruit entwined with a beguiling undercurrent of eucalyptus, spearmint and spice. An abundance of natural acidity carries right through the palate, providing structural support and balances the ripe fruit, whilst the texture is savoury and pleasant, assisting to reveal secondary threads of toast and a meaty barrel fermented complexity. The palate blissfully culminates in a very lingering fashion aided by a horde of supple, velvety tannin leaving behind a smack of cocoa to savour.
Cold soaked for three days prior to warming. Fermentation was allowed to start spontaneously prior to inoculating with Cabernet specific yeast. Warm fermentation in open fermenters on skins for 10 - 14 days between 18 - 22°C. Gentle pulse air was used opposed to plunging, along with drain and returns to limit harsh extraction. Wine was pressed off skins using airbag press.

Our inaugural release of this long anticipated product stands out in its distinctive and provocative guise and has certainly been worth the wait. An exceptional bounty of impeccable fruit was treated with great care. In order to capture the abundance of flavour, phenolic material and tannin on offer but avoiding any over extraction or harshness. Thoughtful alignment and maturation in subtle new French oak provided a cache of unique spice and cedary complexity whilst allowing the wine to mature and soften to it’s velvety, smooth state. Showing such elegance and restraint this Coonawarra Cabernet is inherently a Cutie in comparison to its voluptuous sibling the Barossa Babe. This wine has an enormous cellaring potential and will richly reward the patient.
