Hand-picked, open-fermented, basket-pressed and matured in new, 1 and 2-year old French barriques for 18 month. The impact of the French oak is more than was expected or needed, but there is a proud display of cabernet fruit behind that veil of oak, leaving this wine with more savoury characteristics than Hilltop Vineyard.
