Vinification

A 48-hour pre-ferment soak was followed by inoculation and fermentation in fermenters. Pressed, and then transfer into French oak for spontaneous Malo lactic ferment before racking off lees and further barrel maturation.

Spicy scents, red cherry, whiff of cranberry too. Pleasing, gentle start. Crisp texture and find, satiny tannins, a little pinched with acidity to close but feels fresh and invigorating as a style. Some clove marches in, sappy cherry to taste, good length too. A little sense of pinot noir 101 but has charm.

Bright, medium to full red-purple colour. Charming cherry fruit-driven aromas, fresh and bright with a hint of smokiness; the palate tight and firm and slightly tannin-bitter. It needs food and warming up. Good potential, quite firm and youthful at this juncture.
