Three rack-and-returns were conducted over fifteen months as the wine seasoned in a mixture of fine-grained Bordeaux and Burgundy-coopered barrels.

Vinification

The grapes were hand-harvested from vines planted in 1971 set in high country (220-230 metres). With the varieties fermented separately, the clusters were destemmed and the berries were sorted straight into open fermenters. The cold soak lasted four days; the skins on the Shiraz were plunged three times daily and the Cabernet was pumped over daily. Both were left on skins for a minimum eighteen days. After basket pressing, the light pressings of the Cabernet were included in the free run while the heavier pressings were kept separate.

If you wanted to show an overseas visitor an example of a ‘classic’ South Australian wine, then this would be a fine place to start. It’s medium to full bodied, almost svelte, with succulent but intense ripe tannin, truffle and grilled meat, blackcurrant and boysenberry, a little toast and smokiness, pitch-perfect acidity, and a finish of impeccable length and composition. Great wine. Dead set classic.

A blend of 56% Cabernet Sauvignon and 44% Shiraz, the 2015 The Peake Cabernet Shiraz has a deep garnet-purple color and a profound nose of baked cherries, blackberry coulis and blueberry compote with hints of cedar, violets, dark chocolate and a waft of wild thyme. Full-bodied, rich and opulent, it has a seductively complex and plushly textured palate, with tons of black fruit and spice layers, finishing long and perfumed.

Very deep, dark red/purple hue, with a complex, serious bouquet displaying more oak than the pure Cabernet Sauvignon of the same vintage: subtle spice, herb and black fruit aromas augmented by gently toasty oak. The palate is full-bodied and well-endowed with firm, authoritative tannins, but not heavy. A powerful, statuesque red wine, with tremendous intensity and elegance, balance and style, and it should last for 35 years-plus if well-cellared.

Take the best parcels of cabernet sauvignon from Trueman, same for Brookes Road shiraz, a 56/44% blend respectively, and another selection at the final assemblage to ensure it's the best of the best. Yep that works. It's morphed into a harmonious entity. Complex, detailed on every level with powdery tannins, cassis, dark plums, cured meats and spice, very refreshing, full-bodied, deep and superbly balanced. (Jane Faulkner)
