Vinification

Hand-picked, de-stemmed and whole berry sorted and gently crushed to open fermentation. Cold soaked, pumped over daily with a minimum of 18 days on skins. Basket pressed with light pressings added back to free-run, hard pressings kept separate, not used in blend.

Interesting that this is quite a different shape to the Peake. Less flash, more grip. Indeed it’s a deep, drying and varietal Vale Cabernet...cocoa powder, drying tannins, big boisterous flavours reined in by classy oak on nose, palate and finish. Unquestionably a long term, classy wine, but too much for enjoying now. Best drinking: I’d go as far as saying this needs a decade. 17.7/20.

McLaren Vale. A bright and full-bodied cabernet. Blueberry, blackberry and blackcurrant aromas laced with violets. Elegant with seamless texture and lovely balance. Oak is beautifully managed and subtle. Soft but ample tannins. 5 stars.

An open and slightly warming aroma with cranberry, redcurrant and rhubarb aromatics. The palate has excellent density on the front and mid-palate, and the length is impressive. Fine tannins are abundant, and the wine has a long cellaring life ahead of it.

Hand-picked, destemmed but whole berries, open fermented on skins 18 days, basket-pressed, only free-run juice, new and 1 year old Bordeaux barrels, aged 15 months. It's tempting to pour a glass immediately and savour it, for everything from the fruit, cedary oak, tannins to its acidity are in total balance. (Jane Faulkner)
