Vinification
Made using the French saignée method (to bleed). Pinot Noir juice spent a very short time on skins to achieve minimal phenolic and colour extraction, and obtain its beautiful pale colour. The juice was then treated to a slow, cool ferment in stainless steel. Minimal intervention to achieve the most natural expression of the wine.
