The parcels of Chardonnay were harvested in a three week period starting early March 2017. The fruit was harvested at night into small picking bins and gently pressed using a bag press. In order to increase complexity a parcel of the wine was barrel fermented and returned to tank after fermentation. Post fermentation the wine was lees stirred in tank for 10 weeks, prior to stabilisation and blending.
