Mountadam High Eden Chardonnay 2017
From one of the best Chardonnay producers in the country, this white is a stellar example of Mountadam’s handiwork. Classic Chardonnay fruit aromas of peach, nectarine and ripe figs fuse with oaky spice, grilled cashew, clove and nutmeg, all spinning around a green apple and citrus core. With great depth of flavour and length, this stylish wine has the potential to age for at least 10 years.
Aromas of white peach, nectarine and fresh figs. French oak barrel fermentation and maturation gives the wine secondary aromas of cashew nuts and mixed spices.
Chardonnay.
The individual parcels were matured in barrel for an average of 12 months.
The palate has a complex mix of stone fruit, citrus, cashew nuts, and spice. The mid palate is round and creamy but a clean citrus like acid backbone provides length and persistence to the wine. The wine is complex with no single character dominating the wine. The flavour of the wine persists long after it has left the mouth.
The juice was fermented in 50% new French barriques, the balance in 1 and 2 year old barrels. The wine was intermittently stirred (battonage) throughout the maturation period.
