Vinification

To best reflect the variation in terroir across our vineyard sites, each Shiraz parcel was harvested, fermented and matured separately. Harvest dates were from the 28th February through to the 22nd of March. After approximately 10 days on skins in open or static fermenters, wines were pressed and filled immediately to the finest oak barrels. Each parcel was matured for 18 months prior to barrel selection and blending. the final blend consisted of 20% new French oak barrels and wine was bottled in November 2015.

There are always joys to be found in the Penny’s Hill range. Little wonder this winery is now considered one of McLaren Vale’s prime movers. This ‘cracking’ shiraz is neat and composed and yet with all the power you could ever need and want. Dark chocolate, dates, fresh blackberry and licorice notes run proudly through the palate, aided and abetted by cords of tannin.

This wine offers instant gratification, even though it will evolve gracefully over time. It is packed with flavours of blackberry, cherry pie, chocolate and cedar with hints of clove and nutmeg. The palate is full, opulent and richly textured, while remaining perfectly balanced and structured. It is super long and velvety. At its best: now to 2026.

Winemaker Notes

Truly representative of the Penny’s Hill McLaren Vale Terroir, ‘Cracking Black’ pays homage to the Bay of Biscay soils which contribute much in the way of elegance and finesse to the mighty shiraz wines of the region.
