MaturationWine remained on lees for the duration of maturation to encourage texture and complexity. After eight months in 40% new oak the wine was barrel selected then blended prior to bottling in December 2015.

PalateThe wine has power and poise and is well complimented by fine French oak characters. Showing a tight, linear structure with superb texture, minerality and classic balance, ‘The Minimalist’ Chardonnay finishes with exceptional natural acidity and lingering fruit.

VinificationUsing only the finest free run component, the juice underwent complete primary fermentation in French oak barriques with wild yeasts.

Its rich. Its swish. It powers through the palate and has an extra kick to the finish. Remember the good old days of Petaluma Chardonnay? Well it's not like that but it kind of is too. It mixes generosity with refinement. It looks at the spirit of the times and just adds a bit extra. Nothing wimpy about this. It brings it on.

Plenty of grapey intensity to this wine. It smells of
honeyed apples, stone fruit and vanilla, while the palate
stays trim - it’s jam packed full of ripe melon and stone
fruit flavours.
