The wines of Penny’s Hill embody the essence of McLaren Vale with their richness and ability to show what the region does best. The spicy, peppery Shiraz is well supported by the plummy characters from the Cabernet and Merlot and a dash of toasty oak. A well balanced, flavoursome blend drinking beautifully now or if Stored carefully, ‘The Specialized’ will develop and improve in bottle for another 8-10 years.

Harmoniously blended, the palate shows an abundance of dark bramble fruits with layers of mocha, spice and earthy notes. Fine long tannins from the cabernet sauvignon are perfectly balanced with elegant fruit and classy French oak to produce a wine of persistence and poise.

Vinification

Each parcel was vinified separately in the winery. Fruit was destemmed then crushed and fermented on skins for 7-10 days to extract sufficient colour, flavour and tannin. Post pressing, the wine underwent secondary fermentation and maturation in oak barrels, of which 30% were new oak. After 16 months of maturation, perfect balance was obtained for each parcel and the wine was blended. Bottling occured in October 2015.

It’s one of those ‘take anywhere’ wines. Shiraz makes sure it all turns out agreeably; cabernet adds a dustiness and tailors the shape; merlot is thereabouts and oak adds a polished creamy sheen. There’s nothing drastically complex about it but nor is it simple.

Each parcel of grapes was fermented separately then put into barrels (30% new) for malolactic fermentation and maturation for 16 months. This is immediately appealing on the nose displaying black/blueberry, dark plum, violet and roasted nut characters with a hint of cocoa. It is sumptuous and beautifully weighted on the palate, and shows excellent fruit purity and richness, enhanced by spicy oak undertones and rounded tannins. A blend of 50% shiraz, 30% cabernet sauvignon and 20% merlot. At its best: now to 2024.
