The wines of Penny’s Hill embody the essence of McLaren Vale with their richness and ability to show what the region does best. The spicy, peppery Shiraz is well supported by the plummy characters from the Cabernet and Merlot and a dash of toasty oak. A well balanced, flavoursome blend drinking beautifully now or if Stored carefully, ‘The Specialized’ will develop and improve in bottle for another 5-8 years.

A seamless wine showing an array of dark plum, blueberry and cherry with hints of cedar, dried herb and anise all adding complexity.

Palate

The palate continues to shine and offers flavoursome, spicy Shiraz fruit, balanced perfectly by fine, long Cabernet Sauvignon tannins and soft, juicy Merlot flavours. The French oak is finely balanced to add depth and class to produce a wine with persistence and poise.

Vinification

Each parcel was vinified separately in the winery. Fruit was destemmed then crushed and fermented on skins in an open or static fermenter for 7-10 days to extract sufficient colour, flavour and tannin. Post pressing, each parcel underwent secondary fermentation and maturation in oak barrels, of which 20% were new oak. After 16 months of maturation and when perfect balance was obtained for each wine, ‘The Specialized’ was blended. This wine was bottled in October 2018.

The Real Review, 23 May, 2019
Very deep, dark red colour with a purple tint. Aromas of black plums, concentrated and essency but a more fruit-driven style than some of this maker's shirazes. Very good concentration, density, depth of flavour and drive. The cabernet is not obvious - just good ripe fruit flavour, and plenty of it, concluding with a solid grip.

It’s generous, well-structured, alive with berried fruit, lifted by notes of bay leaf and mulberry and clipped attractively with sweet/smoky oak. You can drink it now, you can cellar it; it works both ways. Hefty and honed.
