Vinification
The varieties are fermented separately in stainless steel vats, with the alcoholic fermentation lasting about 8-10 days, at a maximum termperature of 30 degrees celsius. The wine remains in stainless steeel until bottling, in April of the year following harvest. The wine spends a brief period in bottle prior to release.
