Vinification

Handpicked, with each parcel handled separately in the winery (a total of 18 individual batches). Hand sorted and carefully destemmed (some whole bunches), each parcel went into traditional open fermenters. The wine underwent three days of cold soaking to ensure even and thorough extraction. Batches were on skins for 7-10 days.

Hand-picked, each parcel vinified separately, destemmed (some whole bunches, 3 days cold soak, open-fermented, 7-10 days on skins, matured in French puncheons for 10 months. The expressive bouquet sets the scene with its mix of spicy, savoury red and black cherry fruits that are faithfully reproduced on the complex palate. The finish has excellent texture and structure inviting repeated visits to the glass. Terrific entry point pinot.
