Vinification

Whole bunches were put into a fermenter and left to carbonic macerate for 10 days without any crushing, plunging or pumping over. It was then gently pressed to a small tank, the ferment was allowed to complete, and then the wine was racked to a single old puncheon (500L) for maturation without sulphur dioxide for 5 months, till the end of Winter.

Any lighter in colour and it would be confused for a rosé, the nose has a sweetness of stem with cranberry and capsicum. The palate is a mirror image of the nose with a brightness of fruit, and the weave of capsicum giving a suppleness to the wine that is pulled back into line by framing acidity. I think “smashable” is probably one of the best words to describe what is an incredibly enjoyable wine. This will be well and truly best in its youth. Drink 2019 - 2021.

Incredibly light in colour and cloudy to boot, but just so scrumptious. Nuts, smokes and spices galore. It’s built on acid, it’s savoury to its back teeth, it shows finesse and it has character Just don’t expect depth. that’s not its shtick..

Medium to light brick-red to tile-red, and it’s a little murky. (Unfiltered) A colour quite unlike any other cabernet. The bouquet is very funky, stemmy and eccentric, not varietal at all, but quite complex, thanks largely to sulfides and whole-bunchy characteristics. It's also a bit green. The tannins are slightly gritty and bitter, but would not be a concern with food. Indeed, it's an attractive drink with lighter meats and cheeses. Just don't expect anything like any cabernet you've had before! Cellaring future unknown.
