This is a real show stopper. It’s textural and nutty with delicate honeydew melon and peach flavours mingling with ginger, toast, and spice, partly due to the wild ferments that give added complexity and funk. With masses of creamy texture balanced by limey acidity, to say this chardonnay is delicious is an understatement. Enjoy it with chicken, crayfish or runny aged brie.

Ripe stone fruit, lifted citrus blossom and an intriguing note of green papaya abound along with a waft of freshly cut hay and a calming trace of oatmeal and spice.

A fleshy, rich palate of peach, syrupy fig and yellow nectarine are complimented by furtive hints of guava and kiwi before entwining with a soothing passionfruit curd creaminess. The textural mid palate harbours a wealth of toasted hazelnut along with subtle spice and butterscotch notes, enhanced by a mealy complexity from eight months lees stirring. The cleansing acidity vibrantly supports the palate whilst balancing the light, drying phenolics and lingering zesty ruby grapefruit finish.

Night machine-harvested, mostly cool-fermented in stainless steel with aromatic yeast, a small portion wild-fermented in large-format oak, blended post-ferment, lees-stirred weekly for 8 months. It's difficult to know how much the small percentage of wild ferment in used oak contributed to the wine, but it seems to have been far more important than a volumetric measure would suggest. Shortly put, this is a fresh, vibrant and satisfying chardonnay that transcends the usual anodyne McLaren Vale chardonnay.
