VinificationThis vineyard has an excellent track record with chardonnay and we have been working with the owners since 2003. There is an obsessive attention to detail that delivers pristine hand picked fruit perfect for whole bunch pressing. After chilling in a cold room overnight we press the whole clusters of chardonnay direct to barrel: no clarifying, no acid added, no yeast. The natural ferment kicks off as the juice warms. The oak is 500L French oak puncheons (35% new) which better integrate the oak characters, respect the fruit and look way cool. After 10 months on full lees in oak the wine is bottled.

Chilled grapes were whole bunch-pressed and wild yeast-fermented in French puncheons (35% new). A high class, single vineyard chardonnay, the fruit flavours as intense and long as they are deep, with grapefruit interleaved with white peach and nectarine; the barrel ferment inputs provide a framework for the fruit, but do not threaten it in any way. From the cool, southern end of Margaret River.
