Vibrant red and dripping in the sweet cherry, plum and spice characters that typify good Yarra Valley Pinot Noir. Chalky textures balance out the red cherry, cranberry, cinnamon and spice, surrounded by a velvety mouth-feel. If cellared for 3-5 years, it will soften and develop even more. Try pairing it with duck or suckling pig.

Vinification

Harvested from vineyards in the areas of Dixon’s Creek, Yarra Glen, Coldstream and Gladysdale, each vineyard is handcrafted individually. Open pots and static fermenters provide difference in control of fermentation management technique, temperature and flavour and tanin extraction. Yeast selection also allows winemakers to enhance mouthfeel, structure and fruit, depending on what each vineyard is bringing to the wine.
