Tar and roses are flavours synonymous with nebbiolo and this red embodies the name like no other. Black liquorice sweetness, leather and olive tapenade characters add to this delicious mix, combined with bold tannins, giving this impressive wine flexibility to cellar for several years. It will go down a treat with braised beef and hearty winter vegetables.

Vinification

The fruit was machine harvested and crushed to small open fermenters and hand plunged 3 times a day. After approximately 10days of fermentation during which time the temperature and acid levels were monitored and adjusted as necessary it was pressed to tank using a gentle air bag press. The wine was racked off gross lees directly to barrel to finish malolactic fermentation and mature in older used barriques for 12 months.

Mid-garnet; tomato bush, sarsaparilla and creamy strawberry notes make the wine's entrance. Some sandalwood and orange zest, spring up on the back end. The tannins are twiggy and firm, delivering a savoury rasp. The acidity is all soprano, sweeping the wine along. (Ned Goodwin)
Winemaker Notes

Nebbiolo is a thin-skinned variety and known for its unusually light colour and deceptively high level of tannins. In fertile soils, it can produce large crops with large bunches and berries. The Heathcote vineyard while close to the rich deep Cambrian vein of soil is tempered by harder granitic gravels that have seen the vines produce a more balance canopy to crop ratio. The balanced crop level has meant even ripening and minimal disease pressures.
