Deliciously savoury, fruity and smoky, this is top shelf Australian Sangiovese. It’s bone dry with intense floral aromas introducing a palate that’s full of sweet cherries, pomegranate and bold, chewy tannins. It’s a red wine made for food and would partner especially well with veal cutlets and garlic mash.

Vinification

The fruit was machine harvested into 2.5t steel bins, transported directly to the winery for immediate processing. Crushed to static fermenters it was pumped over twice a day for approximately 20 minutes each time. During which time the temperature and acid levels were monitored constantly and adjusted when necessary, after completing fermentation the wine was pressed to tank using an air bag press. It was racked off gross lees directly to barrel to finish malolactic fermentation and mature in mainly older used barriques. The barrels were checked and topped each month.

Deep, bright red/purple colour. Attractive fresh and ripe dark cherry to raspberry aromas, the structure is firm and bold and upright, with nicely measured grip which is balanced by intense and concentrated flavour. A bright, bold wine with depth and persistence.

The flavour profile here is excellent. Gamey, cherried, meaty and spicy; complex in a good way. One smell/taste and I was on board. There’s some alcohol heat to the finish, which has to be acknowledged, but there’s plenty of both value and enjoyment to be had here. Gentle creaminess to the texture doesn’t hurt either.

Winemaker Notes

Sangiovese is also a thin-skinned variety like Nebbiolo. It is known for its earthy more than fruity notes, it has attractive mid red colour and can be characterised by high levels of tannin well balanced by acid. It is suited to well drained soils with abundant sunlight both of which the Heathcote vineyard provides.
