MaturationThe resulting wines were then run to predominately new French oak barrels for 18 months’ maturation. Throughout this time, they were regularly topped and racked. The separate wines were blended in January 2017 then egg white fined during their second winter in barrel. The finished wine was then bottled in December 2017. The final blend is 51% cabernet sauvignon, 47% merlot and 2% cabernet franc.

With fine colour, the wine shows fantastic aromatic complexity of cassis, graphite, cedar and gravel fruits. The palate is classic for a merlot blend: fleshy red raspberry fruits on a bright and taut palate underpinned by open knit, balanced tannins and some mocha scented oak. Still closed, the wine’s concentration, balance and structure suggest it will drink well for a decade, if not two.

Cabernet Sauvignon/Merlot/Cabernet Franc blend; a brilliant magenta
colour, the wine has a wonderful floral bouquet of lavender, violets

plums, blackcurrants, black cherries and wild strawberries overlaid
with a touch of cedar and thyme.
