Palate

Notes of grapefruit and honey play through a soft, round palate of lemon custard and vanilla. With fabulous concentration and complexity, this is long, pure, fresh chardonnay with superb potential.

Vinification

Each parcel was gently whole-cluster pressed, cold settled and racked to new and seasoned French oak barrels for fermentation. The resulting wines remained in contact with their yeast lees while undergoing malolactic fermentation.

Nectarine, apples, toast and spices with digestive biscuits. Medium to full bodied, firm core of acidity through distinctively savoury toasty flavours, creamy oatmeal perked up with preserved and fresh lemons. Finish is pretty fresh, and of decent length. Could do with a year to unwind, then go.

Sweet aromas of crème pâtissière at first but so dry and fresh they don’t dominate the palate, which is marked by pure lemon freshness, finishing with that creamy texture and a lightly salty note.
