Vinification
Each parcel was gently whole-cluster pressed, cold settled and racked to new and seasoned French oak barrels for fermentation. The resulting wines remained in contact with their yeast lees while undergoing malolactic fermentation.

Elston is a very unique style of New Zealand chardonnay made in a reserved and clean style with subtle oak. Pretty floral and white peach fruit with understated spicy oak are followed by a crisp mid-weight, fruit-driven palate. It needs some time to blossom.
