VinificationThe fruit was harvested at night when the winemakers felt the flavours were right. The juice was gently extracted from the fruit to minimise colour pick up (the fruit is a dark pink/grey colour). Cool fermentation was carried out in stainless steel to retain fruit characters. Extended time on lees add to the texture of the wine.

According to our winemakers Pinot Gris is one of the most challenging white wines to make. The first choice they are faced with is when to pick and what style to make. There are of course two styles of wine made from the same grape variety (Pinot Gris and Pinot Grigio). The styles can range from crisp, lean and racy to luscious, opulent and rich. The latter part of the spectrum is generally labeled as Pinot Gris. The style relies on flavour richness and texture.
