An energetic and very mineral driven entry with notes of lime, talc and fresh spring flowers. Mouth-watering acidity with lovely depth and concentration is retained with a taut, focused and delicate framework. The sugar spritz has a leesy and glossy texture, and the finish runs deep with incredible resistance.
After a slow yet even ripening period, the fruit was handpicked with great flavour and amazing natural acidity and low pH. The fruit was gently pressed and only the free run was fermented in stainless steel. Left on fine lees for 5 months to build texture and weight. This wines was then lightly fined, filtered and bottled.
