Vinification
Each variety was picked and made separately, allowing me to pick the fruit at optimum ripeness and make the best wines possible. The Shiraz component had a good amount of whole bunch in it, which works out to be 17% whole bunch in total. All fermented wild and foot stomped twice a day to minimise extraction.

Rose petal, pretty, floral notes, strawberry-watermelon scents. Tangy and refreshing is the message though there’s a little flesh and forest berry flavour to sink your teeth into, though the default is bony, leaner style with high drinkability. A good alternate from Barossa staples. Easy to like this.

A blend of 34% 16 year old grenache vines, 34% 20 year old shiraz and 32% 30 year old bushvine mataro, wild yeast open-fermented with 17% whole bunches, 12 days on skins, matured for 6 months in used French oak, the grenache in puncheons, the shiraz in hogsheads and the mataro in barriques. It is extraordinary how the fruit flavours are ripe with such a low alcohol for this blend that meets McLaren Vale on equal terms. Totally delicious wine.
